Generic, old school style - but quick and easy chili - from Preppy Kitchen
2 T olive oil
1 lg onion, chopped
1 green pepper, chopped
Cook over med-high heat for 5 min - until soft
Add 4 cloves garlic, minced, cook for another minute
Add 1 lb ground beef - break up and cook for 5 min - until no longer pink
Reduce heat to medium- add
1 T. tomato paste - cook for 1 minute
Add & cook for 1 min - stirring - until aromatic
3 T chili powder
1 T cumin
1 ½ tsp dried oregano
1 t salt
½ t black pepper
¼ cayenne pepper
Add
14.5 oz can diced tomatoes
8 oz can tomato sauce
16 oz can kidney beans - drain & rinse
16 oz cab pinto beans - drain & rinse
2 c beef broth - made from Better Than Bouillon
Simmer uncovered until it thickens - 35-40 minutes
Add juice of one lemon
Add salt and pepper to taste
Serve with shredded cheese, sour cream, sliced green onions, corn chips - any combo
